Oenops Winery
Established in 2015 by famed winemaker Nikos Karatzas and in the spirit of the negociants from Burgundy. Working from long-term partnerships with growers who share the same philosophy came Oenops Wines.
Wines made under Niko Karatzas philosophy emphasize terroir expression and are vinified only with wild yeast, spontaneous fermentation, low to zero added sulfur, and no fining or filtering. The first series of wines is APLA, which translates as “simply” or “naturally.” These are always blends. The second series is Oenops and will also be a focus on single vineyards and old vines.
Vinification practices being used are amphoras, concrete, inox tanks and used French oak barrels. Vineyard practices are all organic, and some vineyards are biodynamic in regards to the reds. The winery’s motto is “Old Roots. New Routes”.
