Paolo Cali

I'm Paolo Cali. I am a winemaker pharmacist who bet on a project that focused on his own territory by dedicating himself to the cultivation of the vineyard and the production of wine, recovering the centuries-old family tradition in these same lands. My company has grown with me and those who work with me with passion and dedication. It was the dream I cherished as a child, the dream of reviving the countryside where my father took me every afternoon after school.

I have the ambition to produce real wines, free from conceptual schemes, free not to chase fashion and free to excite, having the privilege of bringing what I think and believe to the tables and in the glasses. The vines are grown on sea sands, shaped by wind and rain like dunes, scorched by the summer sun until they become inaccessible.

I decided to plant and cultivate only native Sicilian vines, such as Frappato, Nero d'Avola and Grillo, and to vinify them by enhancing the peculiarities of the soil and climate, which guarantees important temperature ranges. Every year we travel thousands of kilometers between the rows, under the sun or in the rain, animated by passion. We firmly believe that to make an excellent wine, it is essential to invest in the care of the vineyards. For this reason, we take care of each screw individually, carrying out, among other things, the most important and delicate operations manually. We think that only a healthy vineyard, in perfect balance, can give us significant results. The cellar activities, in harmony with our oenologist Emiliano Falsini, are oriented towards limiting interventions to safeguard the integrity of the wine and its correspondence with the territory.
